Purple cabbage

Don’t know what to do with cabbage? Try this and you will be surprised, even cabbage haters like this recipe!

Braised purple cabbage

Ingredients:
1 small purple cabbage
1 small fennel bulb (optional but nice)
2 tbs dried cranberries
2 apples (peeled & diced)
1 tbs butter
1 tbs olive oil
0.5 large vegetable stock cube (I like Massel)
2 star anise
0.5 tsp fennel seeds
2 bay leaves (optional)
salt/pepper to taste
onion or leek optional
Method:
Put all ingredients into a medium size saucepan with a splash of water to get it going, once simmering turn down to lowest setting and simmer away until transparent, stir often. Remove star anise and bay leaves before serving.

    I LOVE purple cabbage…of course as I am not a vego I like mine to have bacon in it. 🙂
